Cooking With Vickie Britton - Cheesy Potatoes

If you have ever been to one of the Britton’s Annual Fish Fries, you have enjoyed my cheesy potatoes.
Cheesy Potatoes
Ingredients48 oz diced hash brown potatoes
1 ½ sticks butter
2 cups milk
1 16 oz (1lb) of original Velveeta cheese
1 pkg (2 cups) sharp cheddar cheese
½ cup sour cream
1 Tbsp. smoked paprika
• Place potatoes in a greased casserole dish.
• Melt the cheeses and butter in a pan on the stove.
• I leave out some cheese to sprinkle on top.
• Salt and pepper the potatoes really well.
• Pour the mixture over the potatoes and mix in the sour cream.
• Mix together
• Sprinkle on cheese, salt and pepper, and more paprika.
• I like to let this rest over night or for at least an hour before baking.
• Bake at 350 degrees for an hour and check the potatoes to see if they are done. If not, continue to cook for another half hour.

You can add bacon, ham, or your favorite vegetable to change it up a bit.
