One of my all-time favorite meals my mom use to make.


Meatloaf

Meatloaf Ingredients:
2 lbs. ground beef, you can use 85% or 90%  lean

1 med onion, finely chopped

1 med green, yellow, or red pepper chopped finely

3 garlic gloves, minced

3 Tbsp ketchup

3 Tbsp fresh parsley, finely chopped

¾ cup smashed saltine crackers

1/3 cup milk

1 ½ tsp salt

1 ½ tsp Italian seasoning

¼ tsp black pepper

½ tsp ground paprika

 

Meatloaf Sauce Ingredients:

¾ cup ketchup

1 ½ tsp white vinegar

2 ½ Tbsp brown sugar

1 tsp garlic powder

½ tsp onion powder

¼ tsp black pepper

¼ tsp salt

 

Line a 9” x 5” loaf pan with parchment paper. Preheat oven to 375 degrees. In a large bowl, add all of the ingredients for the meatloaf. Mix well. Add the meat mixture to your loaf pan and press meat down and shape into a loaf. Bake at 375 for 40 minutes.

In a small bowl, mix all of the ingredients for your sauce. Spread the sauce over the meatloaf then return to oven and bake another 15 to 20 minutes or until internal temperature of 160 degrees. Let it rest for about 10 minutes. You can use the juices from the pan to drizzle over the meatloaf.
