Cooking With Vickie Britton – Seafood Salad

1.5 Tbsp lemon juice

1 Tbsp vegetable oil

2 hard-boiled eggs, chopped

2 Tbsp green pepper chopped 

½ cup tomato, diced

1 cup dry macaroni, cooked & drained

1 lb. crab meat 

1 lb. shrimp

1 tbsp onion, chopped

Mix lemon juice and oil. Combine with macaroni. Chill and stir occasionally. Add remaining ingredients. Add Dressing to macaroni and chill.

 

Dressing

½ cup mayonnaise

2 tbsp sour cream

2 tsp sugar

2 tsp vinegar

1 tbsp parsley

¼ tsp ground pepper

1 tsp. dill weed

Add whatever seasonings you may enjoy. It’s best when fixed the day before and allowed to sit overnight in the refrigerator.
