Cooking With Vickie Britton — Salsa

With all the tomatoes and peppers coming in, let’s make some salsa!

You will need:

  • 5 or 6 medium to large tomatoes (I peel mine)
  • 1 14 oz can of petite diced tomatoes with green chilies 
  • 1 medium onion (red or white)
  • 2 jalapeno peppers (1 with seeds one without)
  • 1 bell pepper of any color
  • 1 whole bulb of fresh garlic 
  • 2 Tbsp. lime juice 
  • salt and pepper to taste
  • a small amount of fresh cilantro 

Combine all the ingredients in a food processor or blender. Rough chopped if you like it chunky. Fine chop if you don’t.

Put all ingredients in a pan and cook on med heat for about 30 minutes. 

You can put in mason jars to can or you can freeze.
