Cooking With Vickie Britton — Apple-Walnut Cake

The cooler fall temperatures always puts me in a baking mood. This is a recipe passed down to me from my mother-in-law.

Ingredients:

2 cups sugar

3 cups all-purpose flour

1 tsp. baking soda

1 tsp. cinnamon

1 tsp salt

1 ½ cups oil

3 large eggs

1 tsp. vanilla

3 cups unpeeled apples, chopped

1 cup walnuts, chopped

  • Mix your sugar, flour, cinnamon baking soda and salt in a large bowl until blended.
  • Stir in your oil, vanilla, and eggs. When mixed well, add in your apples and nuts.
  • I use a Bundt cake pan greased but not floured. Pour into Bundt pan.
  • Bake for 1 hour at 350 degrees or until toothpick comes out clean.
  • Cool for 10 minutes before turning out of the pan.
  • This cake is moist and can be served with a whipped cream topping.
