Cooking With Vickie Britton — Lets Make a Lemon Bundt Cake

Ingredients

15.25 oz box of lemon cake mix

3.5 oz instant lemon pudding mix ( just the dry powder, not made and not the cook-and-serve)

1 tsp lemon zest

½ cup water

½ cup lemon juice fresh if you have it

4 large eggs

½ cup vegetable oil


Lemon Glaze

½ cup confectioners’ sugar

1 tbsp cream or milk

½ tsp of lemon zest


Instructions

Preheat the oven to 350 degrees.

Spray a 10-cup Bundt pan heavily with baking spray

I used my stand mixer with the paddle attachment

Add all the dry ingredients and mix well

Add the lemon zest, ½ cup water, ½ cup lemon juice and 4 eggs

Mix on low speed for about 1 minute

Add your ½ cup oil and mix again


Fill the Bundt cake pan with the batter.

Bake for 35 minutes

Cool for 10 minutes before flipping onto a cooling rack

Cool completely


Drizzle with the lemon glaze
