Cooking With Vickie Britton – Corn Salad
Apr 29, 2024 10:24AM ● By Vickie BrittonCorn Salad is such a great summer salad. You can enjoy summer veggies from the garden or the farmer’s market. You can use whatever veggies you like.
Ingredients
- 4 ears of sweet corn but frozen corn will work. (3 cups)
- I like to grill my corn first and cut it off the cob.
- 1 small red or sweet onion ( about ¼ of a cup)
- 1 bell pepper of any color
- 2 stalks celery
- 1 14 oz. can of black beans (rinse well)
- 1 cup Cherry tomatoes (as many as you like)
- You can add a sprinkle of feta or blue cheese
- I like to dice my veggies small.
Dressing
- 3 tablespoons of red wine vinegar
- 3 tablespoons olive oil
- Salt and pepper to taste
- You can garnish with some parsley, fresh basil, or dill
This is such a great summertime salad.
