Cooking With Vickie Britton – Corn Salad

Corn Salad is such a great summer salad. You can enjoy summer veggies from the garden or the farmer’s market. You can use whatever veggies you like.


  • 4 ears of sweet corn but frozen corn will work. (3 cups)
  • I like to grill my corn first and cut it off the cob.
  • 1 small red or sweet onion ( about ¼ of a cup)
  • 1 bell pepper of any color
  • 2 stalks celery
  • 1 14 oz. can of black beans (rinse well)
  • 1 cup Cherry tomatoes  (as many as you like)
  • You can add a sprinkle of feta or blue cheese
  • I like to dice my veggies small.


  • 3 tablespoons of red wine vinegar
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • You can garnish with some parsley, fresh basil, or dill

This is such a great summertime salad.
