Cooking With Vickie Britton — What to do with all those zucchinis?

Let’s Make Zucchini Boats!
Ingredients:
4 medium zucchini
½ teaspoon dried Italian seasoning salt and pepper to taste
2 teaspoons olive oil
1 pound mild Italian sausage
½ cup finely chopped onion
1 teaspoon minced garlic
2 cups of your favorite marinara sauce
¾ cups shredded mozzarella cheese (I shredded my own)
1 tablespoon chopped parsley
- Preheat your oven to 400 degrees and spray a large rectangular baking dish with oil./
- Cut your zucchini in half lengthwise and trim off the ends. Scoop out the flesh of the zucchinis. Sprinkle the Italian seasoning, salt, and pepper over the zucchinis. Then place zucchinis in your baking dish.
- Cook your sausage in some oil over medium heat until done. Add your onions and garlic. Pour your marinara sauce into the sausage and simmer for 5 minutes. Spoon the meat mixture evenly into your zucchini shells. Top with your mozzarella cheese.
- Bake for 25 minutes or until the shells are tender and the cheese is golden brown and sprinkle with parsley.
