Cooking With Vickie Britton – Crockpot Pumpkin Cobbler

INGREDIENTS

2 cans 15 oz. pumpkin

1 can 12 oz. of evaporated milk

1 cup white sugar

¼ cup brown sugar

3 eggs

1 ½ teaspoon of cinnamon or pumpkin pie spice

1 teaspoon vanilla

1 box spice cake mix ( you can use yellow cake mix)

1 stick butter

In a large mixing bowl: add pumpkin, evaporated milk,  white sugar, brown sugar, eggs, cinnamon and vanilla.

Pour ingredients into your greased crockpot. Sprinkle your cake mix over the top; do not mix together. Slice your stick of butter into pieces and place them on top of the cake mix.

Cook for 2 ½ to 3 hours on high.

Top with some cool whip.
