Cooking With Vickie Britton – Chicken Rice Broccoli Casserole

Let’s make an easy casserole for dinner.

INGREDIENTS

2 cups white rice, or any flavored rice you like

2 cans of cream of chicken soup

1 can of chicken broth

1 tsp. salt

1 tsp. pepper

1 tsp. Italian seasoning

1 tsp. garlic powder

2 cups sharp cheddar cheese

1 large bundle of fresh broccoli

1 pkg. of onion soup mix

2 ½ lbs. (about 3 to 4 large ) chicken breast


DIRECTIONS

  • Place your rice in a 9x12 baking dish
  • Add 2 cans of the cream of chicken soup
  • Add 1 can of chicken broth
  • Add your salt, pepper, Italian seasoning, and garlic
  • Mix together
  • Place your chicken breast in the casserole dish
  • Sprinkle 1 pkg. of onion soup mix over the top of the chicken
  • Bake 1 hour at 350 degrees 
  • Remove from oven and top with your 2 cups of cheddar cheese
  • Return to the oven for another 5 minutes to melt the cheese

Enjoy this quick and easy dinner.
